Ingredients for 2
1 Zucchini / Courgette
Black olives
Paprika
Chilli flakes
Yoghurt
Garlic
Pepper
Salt
Oil
Balsamico vinegar
Preparation
Cut zucchini into small pieces. Heat a frying pan on the stove and add a bit of oil once the pan is hot. Press the garlic and fry it briefly. Add the zucchini and fry them shortly. Add paprika and chilli flakes to taste. Take pan away from stove and let zucchini cool.
Mix yoghurt, olive oil, balsamico vinegar, salt and pepper in a bowl. Add the zucchini once they are cool. Put the salad into the fridge for around half an hour. Chop the black olives and sprinkle them on top. Serve chilled.
